PORK SCALLOPINI WITH MUSHROOMS  & APPLE JUICE

This Pork Scallopini (scaloppine in Italian) features pork  tenderloin medallions pounded, floured and braised  with mushrooms and garlic.

Apple juice concentrate brings  a subtle sweetness to the sauce.

Ingredients

1. Cut the pork  into medallions.  2. Pound the meat  to tenderize it. 3.Flour the pork  on both sides. 4.Brown the meat  in the pan.

Cook mushrooms and garlic. Add  the meat  and apple juice. 

Cook until tender. Serve over orzo!
