CAPONATINA  (EGGPLANT SALAD)

Caponatina (Eggplant Caponata)  is a Sicilian eggplant salad with olives, tomatoes onions and a sweet-and-sour dressing!

Make this refreshing appetizer or side the day before  serving to allow  the flavors  to develop.

Ingredients

Cube the eggplant. Peel the tomatoes  and squeeze dry.

Cook the vegetables. Add the tomatoes  and vinegar. After 15 minutes, add olives  and sugar.

Stir to combine  and place  in a serving bowl  to chill overnight.

Serve it in a dish or on crostini!
