Homemade almond paste gives these pine nut cookies a delicious, fresh taste and great texture.

Ingredients

Combine powdered sugar, almond flour and salt in a food processor. 

Add in egg whites and almond extract.  Break up into pieces.

Add in sugar and pulse until crumbs form. Add in egg whites.

Roll the dough into balls and cover the tops and sides with pine nuts.

Bake until golden. Enjoy!
