Pan-Fried Eggplant  with Tomato Sauce  is a family recipe  from Naples!

Thin eggplant planks are fried in oil and layered with Parmesan cheese, sauce and basil.

INGREDIENTS

 Salt the planks to bring  out moisture. Wipe off  the moisture after an hour.

 Fry on each side until golden brown.

Layer the eggplant  with Parmesan cheese,  tomato sauce and basil.

You can eat them at room temperature  or chilled. Try them  in a sandwich!
