PECAN MERINGUE  COOKIES

Pecan  Meringue Cookies (Cloud Cookies)  are crunchy  on the outside, nutty and chewy  on the inside.  They're so delicious!

Cocoa brings a fabulous chocolate accent to these cookies, which are naturally gluten-free  and dairy-free.

Ingredients

Make the brown sugar meringue by beating together egg whites, brown sugar,  cream of tartar, salt,  vanilla and cocoa.

Mix in pecans.  Scoop batter onto a baking sheet.  Bake until the tops are set. 

Dust with cocoa, cool and enjoy!
