Sometimes, less is more. This simple, Oven-Roasted Cod is such a hit in my family!
It's coated in olive oil, seasoned with salt and pepper and roasted until tender and flaky. It sounds plain but doesn't need a thing. It's fabulous just the way it is!
Like my popular Broiled Cod and Air Fryer Cod, this is a low-carb, low-calorie fish recipe that works with multiple diets. Plus, it's so darn easy. It's now one of my go-to baked cod dishes!
Recipe ingredients
This is an easy cod recipe without lemon. You just need two ingredients, plus salt and pepper!
Cod: Use fresh cod fillets or cod loins. But, feel free to substitute haddock, pollock, orange roughy, or any sturdy white fish.
Olive Oil: Use your favorite kind. It's the signature ingredient that brings delicious flavor!
How to make oven-roasted cod

- Place the cod on a foil-lined sheet pan. Rub olive oil on both sides of the fish. Sprinkle on salt and pepper.
- Roast at 400 degrees F just until it flakes easily.
Recipe tips
- Don't add lemon juice, because it will overpower the roasted cod. You want to be able to taste the olive oil.
- If you want to use the cod in stews or soup, you can cut it into 1-inch pieces, use your hands to toss them with oil and the seasonings, and roast the fish for just 10 minutes.
What to serve with it
To serve, spoon some of the pan juices on top of the cod. Try it with Italian tomato salad or Panzanella bread salad on the side. It also would be delicious with Italian cabbage and basic risotto or oven-baked vegetable risotto!

Oven-Roasted Cod
Ingredients
- 1 pound cod fillets
- 1 tablespoon olive oil
- 1 pinch salt
- 1 pinch black pepper
Instructions
- Preheat the oven to 400 degrees F. Line a half-sheet pan with foil.
- Rub your thumbs along the cod to feel for any bones to remove. Use a knife or kitchen scissors to cut the fish into serving portions. Place the fish on the prepared pan.
- Drizzle the olive oil on the cod. Rub the oil all over the fish, on both sides. Sprinkle on the salt and pepper.
- Roast the cod on the center rack of the oven for 15 minutes, or until the fish is flaky and tender.
- Serve immediately, with any pan juices poured on top. This cod tastes best without lemon.
- Store leftovers in a sealed container in the refrigerator for up to four days. For best quality, do not freeze them.

hello and thank you sooo much for this simple and easy recipe. I always have a hard time when it comes to cooking fish. I'm not such a great cook, I usually just cook simple things, steaks, chops..etc, but I'm trying to learn more. I came across your recipe and it came out great!!
